Brandied Cherries

I used to make brandied cherries for the bar back in the day. There are some great products on the market now that you can buy (Amarena Cherries and Luxardo too), but I've had several emails from old customers asking me for the recipe I used at the bar a few years ago. Here it is:

Brandied Cherries

  • 6 pounds dark, sweet cherries

  • ¾ cup sugar

  • 1 cup water

  • ¼ cup fresh lemon juice

  • 2 cinnamon sticks

  • 1 ¼ cups brandy

Wash and pit the cherries. Combine the sugar, water, lemon juice, and cinnamon in a large saucepan. Bring to a boil and reduce the heat to low. Add the cherries and simmer for 3 minutes. Remove from the heat, remove the cinnamon stick, and stir in the brandy. Transfer the cherries to a jar and refrigerate. For best results, use them within two weeks of making them.

These REALLY liven up a cocktail and make for a superb finish!
