A Few Of My Current Favorites

-1.5 oz. Junipero Gin
-1 oz. Pimms
-1 oz. Fresh Lemon Juice
-1/4 of a Celery Stalk (cut into approx. 3 small chunks)
-Half of 1 large strawberry
-1/2 oz. Simple Syrup, or to taste
-Muddle celery and strawberry half with syrup
-Add Gin, Pimms, and fresh lemon juice
-Shake, strain into tall, iced glass
-Top with Prosecco
-Garnish with the other strawberry half and a small sliver of celery


-6 cilantro leaves
-3 slices of cucumber with skin
-1 slice of jalapeƱo (leave seeds in for maximum heat if so desired)
-3/4 oz fresh lime juice
-1/2 oz green peppercorn syrup
-1/2 oz Cointreau
-2 oz Junipero gin or Cazadores Silver Tequila
-Shake and then fine-strain into a chilled cocktail glass, or, for a summer cooler, strain into an ice filled rocks glass and top with seltzer water. Garnish with a dried pepper, cucumber wheel and cilantro leaf.

2 oz. Aged Rum
1/2 oz. St. Elizabeth Allspice Dram
1/2 oz. Fresh Lime Juice
2 dashes Vanilla-Cherry Bitters
Optional: 1 barspoon of simple syrup
Shake, strain into chilled coup glass, lime twist garnish


-Sprig of Rosemary
-5 dashes of Absinthe
-1 oz. Fresh Lemon Juice
-3/4 oz. (can use more or less, to taste) of Honey Syrup (equal parts honey and water)
-3/4 oz. Sloe Gin (Plymouth brand)
-2 oz. Rye Whiskey
-Shake, fine-strain into a tall, iced glass, top with splash of soda water
-Garnish with a lemon twist and rosemary sprig

I've also been playing around with a combination of Square 1 Botanical Vodka, fresh, muddled grapes, and Prosecco lately with some nice results.
