Strawberries and Celery, Revisited



I came up with a cocktail back in early summer for our cocktail list at the Yacht Club. It's gone through some minor changes as the summer progressed, and it ended up being one of my favorite cocktails. Quite floral and tart, this crisp and refreshing drink will soon be gone.

Pimms Berry Lane

1 medium sized strawberry
2-inch piece of fresh celery, cut from closer to the center of the celery stalk and then diced
1/2 oz. Simple Syrup
Muddle
3/4 oz. up to 1 oz. fresh lemon juice (I like mine with a full ounce, but most folks at the bar prefer only 3/4 oz. on the citrus)
1 oz. Pimms
1.5 oz. Hendricks Gin
3 dashes Rose Flower Water (can be purchased at Middle Eastern markets.  Little goes a long way)
Ice
Shake and strain into an ice-filled Collins glass
Top with a splash of sparkling Rose or Prosecco
Garnish with half of a strawberry skewered with a small piece of celery & a mint sprig
