Peppered Poire



While trying to get rid of some Grey Goose pear vodka and some pear nectar I had laying around, I came up with this fun and bubbly drink:

The Peppered Pear
1 oz. Grey Goose La Poire vodka, OR... if you're a gin fan like me, a nice peppery gin
3/4 oz. Pear Nectar or 1/2 oz pear puree
1/4 oz. Fresh lemon juice
1/2 oz. Green Peppercorn Syrup (or more to taste if desired). *
Shake, strain into a Champagne flute
Top with dry sparkling wine
Garnish with a slice of pear that's sprinkled with crushed peppercorns

* Have fun with the peppercorn syrup.  Try black and green, as they're both tasty syrups.  To make the syrup at home, my recipe is:
- lightly toast 4 tablespoons of green peppercorns in a pan over medium-high heat on the stove.
- remove peppercorns and let cool for a couple of minutes
- In a saucepan, combine 1 cup of water and 1 cup of sugar
- Add the toasted green peppercorns
- Bring to a boil
- Immediately reduce heat; let simmer for 20 minutes, stirring every few minutes
- remove from heat
-strain our the peppercorns
-refrigerate
