Judging by our weather here in the Bay Area lately, you'd sure think it was Spring.
1 1/2 oz. Encanto Pisco (works well with Cachaca too)
1 oz. Lillet Blanc
3/4 oz. Meyer lemon juice
1/4 oz. Honey Syrup, or to taste
A healthy dash of Rhubarb bitters
Shake, strain into a chilled cocktail glass
Garnish with a fresh sprig of mint
