Clever 'Ol James

In honor of Mr. James Pimms, the founder of Pimms Liqueur:


Clever 'Ol James
- .5 oz. Home-Made Ginger Syrup*, or add more to taste if desired
- .75 oz. Junipero Gin
- 1 oz. Fresh Lemon Juice
- 1.25 oz. Pimms Liqueur
- a bar spoon of Burlesque Bitters (approx. 1/8 oz.)
- Shake and strain into a Collins glass over new ice
- Top with home-made rose water soda
(a combination consisting primarily of water, with some rose flower water, a pinch of sugar, and a couple of other interesting ingredients thrown in), and then carbonated using one of these clever gadgets, or for use in an actual bar or restaurant setting with a bigger budget, one of these fancy guys.
- Garnish lavishly with a long lemon twist using one of these awesome tools, a big mint sprig, a lime wedge, and a long, thin slice of cucumber if you so desire

* I have 3 slightly different ginger syrup recipes that I use on a regular basis, but the one that I most often gravitate towards for cocktails is this version:

Ginger Syrup
2 ounces ginger, peeled and roughly chopped
1 cup sugar
1 ½ cup water
1 tsp. toasted whole black peppercorns
Place the  ginger in a sauce pan.  Lightly muddle the ginger to release aroma and flavor
Add toasted peppercorns, sugar and water
Bring to a gentle boil
Reduce heat and let simmer for 15 minutes
Remove from heat and let cool for 30 minutes
Strain into a clean bottle
