Uppin' The Ante

Uppin' The Ante
In a mixing glass with ice, stir:
1.5 oz. Smith & Cross Rum
.75 oz. Daron Calvados
.75 oz. Vya Sweet Vermouth or Carpano Antica or Punt e Mes
Bar Spoon of Pineapple Syrup
2 dashes of Jerry Thomas' Own Decanter Bitters
Strain into a chilled cocktail glass
Garnish:  you can keep it simple with brandied cherries, or go all fancy-pants with a dehydrated pineapple disc, dipped in a bath of Calvados and baked apple bitters.
